Color change when benzoin is oxidized to benzil

What structural features make benzil yellow and benzoin white? How and why does the color change occur when benzoin is oxidized to benzil? The reaction uses a solution of ammonium nitrate in the presence of a catalytic ammount of copper (II) acetate to oxidize benzoin.
