A usual modern switch has 24 10/100 Mbps Cat5 ports and 1 or 2 uplink 1000 Mbps (1 Gbps) ports. You can choose to deploy all switches in a building to a single cabinet (requires more cabling and large shafts) or you can distribute switches to floors (less cables to center and cabins required on each floor). To be realistic, you must run spare cables (like 3 cables to 2 users and 2 cables between a central switch and a usual switch instead of 1). So to give examples, 3 switches up to 72 users on a floor is OK. If you concentrate all devices to the center, just sum it up and check for multiples of 24.
